What are the advantages of a wooden cutting board compared to a plastic cutting board?
For several decades, the general belief was that plastic was more hygienic than wood when it came to food safety.
At the time, it was believed that plastic was less hospitable to bacteria and therefore safer for our health.
However, a 1994 scientific study surprised many when its results showed that wood was much more effective than plastic at eliminating pathogenic bacteria.
The research was conducted by microbiologists from the College of Agricultural and Life Sciences in the United States and demonstrated that wood is capable of killing bacteria, whereas plastic is not.
The scientists found that just 3 minutes after a wooden cutting board was contaminated, 99.9% of the bacteria had been destroyed.
In the case of plastic, no bacteria had been eliminated.

Cleaning
- Each time you finish using your cutting board, clean the surface with soapy water.
- Dry thoroughly with a soft cloth.
- To disinfect your cutting board, use a little lemon juice or spray it with a mixture of equal parts water and vinegar.
Oil treatment
To treat the wood, polish the surface with a small amount of heavy-duty mineral oil and a soft cloth.
- Apply monthly (or more often as needed). Over time, the wood will require less maintenance than it did initially.
- Heavy mineral oil is readily available at pharmacies.
- Keep the wood as well-hydrated as possible.
Sanding
Warning
- Never immerse a wood product in water, as this may damage it.
- Dishwashers should never be used.
- Avoid placing hot dishes, cans, or metal objects (such as a cheese grater) directly on the wood, as they may leave dark rings or marks.
- Avoid direct exposure to sunlight, which may cause discoloration.
- Avoid placing objects with rubber or plastic bases on the wood, as they may stain the surface.
- Maintain a stable humidity level to prevent the wood from cracking or warping.
